Pineapple Chutney in M/W

Hi All,
This chutney made me crazy!! I loved this chutney so much that I went on nibbling just like that. And my daughter had an extra chapati. And already told me to pack the same thing (chapati wrapped with this chutney) for tomorrow. 
When I prepared the mixed fruit curry, there was more pineapple. My kids love it. But before sharing half of what I had, I was thinking to do something with it. I wanted to have something spicy as my mixed fruit curry was sweet, I thought of making chutney with pineapple. I was sure about the taste that it will be good, but never imagined it will come out so good.

Recipe goes here:
Pine apple - 1 cup, cleaned, pealed and cubed
Dry red chilly - 1 long
Red chilly powder - 1 tsp or 2 tsp if you want it spicier.
(Pineapple is having sweet and sour taste so you can add more chilly powder)
Cumin Seeds - 1 tsp
Jaggery - 1/4 cup
Salt to taste
Hing a pinch 
Fresh coconut - 1 tbsp

For tempering
Oil - 1 tsp
Mustard seeds - 1 tsp
Curry leaves - few
 Take peeled and cubed pineapple in a M/W safe bowl. Keep on HIGH for 2 minutes.
Take it out, add jaggery, cumin seeds,hing,dry red chilly and chilly powder.
Again keep on HIGH for 2 minutes, Keep stirring in between. 
Let it be cool. 
Add salt and fresh coconut.
Mix well and put in a blender to paste it. Transfer the chutney in to a serving bowl.
Heat oil in a M/W Safe bowl by keeping it on HIGH for 1 or 2 minutes. Add mustard seeds and curry leaves. Again cook it on high for 1 minute.
Add it to the chutney.
Adjust the seasoning.
Cook on HIGH for 30 seconds.
Chutney is ready to serve with chapati, bread, rice, dosa, idly or anything you wish. I think it goes well with chicken tikka or Fish tikka or any kababs also.

You can prepare this on gas stove also. But it is easier in M/W  because, the fruit cooks well and quick in M/W.

This serves 3 to 4 people if you are serving in a thali for one time only!!!

Mixed Fruit Curry : Clicked for Cook And Click-4

Hi All,
When I posted  "Mixed Fruit Curry for "COOK AND CLICK -4", I was not sure about the taste. But wanted to try as it sounded new to me. 
I went ahead and prepared. It was awesome. I loved it.
I prepared half the qty from given.




The fruits I have used here are:
Papaya
Apple
Banana
Black grapes
Pineapple
You can use which ever is available.

I totally forgot to write that I prepared this in Microwave. 
But you can cook outside also.

Mixed Fruit Curry for "COOK AND CLICK -4"

Hi All,
Next recipe for the event   "Cook and Click" . This is for SEPTEMBER 11th to SEPTEMBER 20thCook  Click here also for the details Event Announcement - "COOK AND CLICK" :
I took it from "BAY BOOKS COOKERY COLLECTION"
THE QUANTITY GIVEN IN THE BOOK IS FOR 6 PERSONS. 
YOU CAN REDUCE THE QUANTITY ACCORDING TO YOUR NEED.
I have changed only one ingredient from the original recipe as I do not get this here at my place. If you are getting it, you can use the same:
Crystallized ginger - 4 to 5 pieces
(I do not get it here, so I will use the normal ginger) - 1" piece - peeled and cut
Hot water
Onions - 2, chopped
Butter - 60 gm
Crushed coriander seeds - 1 tbsp
Curry Powder - 1 tbsp
Plain flour - 1 tbsp
Veg stock or chicken stock - 2 cups
Lime juice - 2 tsp
Black pepper - 2 tsp, freshly ground
Grate coconut - 3 cups
Chopped mixed fruits - 4 to 5 cups(Melons, peaches, plums, grapes, bananas, apples, pears or any other fruits available)
Fresh cream - 2 tbsp
1 If using crystallized ginger :
Cover ginger with hot water for a few minutes to remove sugar, drain, pat day and chop.
2. Sauté onions in butter until tender.
3. Stir in ginger coriander seeds, curry powder and flour.
4. Cook gently for minutes.
5. Gradually add stock, stirring rapidly.
Bring to boil, add lemon juice and season to taste.
Simmer for 30 minutes.
Stir in coconut, fruits and cream.
(there is no salt mentioned in the book, but I feel we should add little salt as per taste)

I hope at least this time I will get few clicks. This is very interesting curry!

Microwave Easy Cooking - FRUITS, Event Announcement

Hi All,

When Valli mailed me to check whether I can host her MEC event for this month, I was happy. Few months back , she had given me the chance to host it. But I was not so much confident to handle any event. Now I am!(Am I? you all should tell me!) 
Thank you Srivalli for giving me a chance to host this event. 
I had few options in my mind for the theme. Finally, I chose FRUITS.
I love the color, the texture, shape and everything about  the fruits. Not to forget at all about the nutrition and the energy!(I am eating Banana while writing this).Nature is so kind for gifting fruits to us.


Are you ready to try new dishes with fruits cooked in Microwave?

As this event is in blog world since 2 years, all our old friends know the rules. But here are the rules again for newbies and for me!
  1. Cook any Vegetarian/ Non vegetarian food with FRUIT as a main ingredient  in the MICROWAVE  and post it in this month in your blog.

Apple and Onion Bake

Here is my preparation for my event " "Cook and Click".

I took half the quantity of given recipe as I felt if I take the given quantity, it will be too much for my family. 
The taste was good, but I felt that we should add less water than told. I had it as a side dish with my normal food.

Banana Peel Halwa

Hi All,
Today I am hitting(not killing) 2 birds with one stone!!! Here is the recipe for two events!

Banana is a favorite fruit of everyone, including God! Banana is the first fruit we offer to God in any Puja. Banana is a rich source of potassium and fibres. I am Not going into the details, as I am using only the peel here. But even the peel is as good as the whole banana.
We get different variety of bananas.I usually use the small or Elaichi bananas. Here in this recipe also, I have used eliachi banana peel. You can use any variety available to you.

Here goes the recipe to make a small cup of halwa. You can increase the quantity to make it more. Only to take care is the quantity of sugar and to be very quick in making or else the peels will turn into black and halwa also turns brown.
Banana peel - 4 to 6, depends on the size of banana 
Sugar - 3 tbsp or less 
(depending on the sweetness of banana and your taste)
Ghee - 2 tbsp
Cashew nuts - 4 to 6
Cardamom - 1/8th tsp
Milk powder - 1/2 tsp(optional), 
I was not sure about the taste of the boiled peel, so thought of adding little of milk powder.  I think it tastes fine without milk powder also. Let me try next time. And I will let you know about the taste. 
Wash and clean the bananas properly. Peel the banana, peel the skins. Clean the ends and keep in water for few minutes. Remove it and clean once again with clean cloth to remove any dirt if in case.
Put the peel in a bowl. Add water just to cover the peel and boil for 5 minutes or till the skin becomes tender. Remove and keep to cool.
Puree it.
Heat 1 tbsp ghee and fry the cashew nuts. Keep aside.
Add Sugar and keep it to boil. Keep on stirring. Once the sugar melts, add the puree,milk powder, cardamom powder and ghee. 
Once it starts leaving the sides, add one more tbsp of ghee. Remove it from fire. 
Keep it to cool.
Banana peel halwa is ready to eat. It really tastes good and I think it is good for toddlers!! Am I right???

Microwave Mango Halwa (Food Remake)

Hi All,
All of you know that I have a sweet tooth (sets of sweet teeth!!! ). And Mango is my favorite fruit(who does not like mango??????   ). 
When I was going through Srivalli's   Mango Mela ...   I got this recipe from Priya of Priya's Easy N Tasty Recipes, I could not wait to make it. Immediately I tried it!!! (Thanks Valli for holding such wonderful events that one can access to many blogs with variety of food from one place)


And!!! I got it right!! It tasted divine!! It tasted like Mango flavored  Sohan Halwa (which we get in Market or sweet shops). I finished it within half a day, (gave little to mom, and my kids do not like sweet).

Mango pulp - 1 cup (Sweet mango is better)
Sugar - 1/2 cup
Ghee - 1 tbsp to 2 tbsp
Cardamom powder - 1/4 tsp 
Finely chopped almonds - 1 tbsp
Transfer the Mango pulp and sugar in a microwave safe bowl. Keep it on HIGH for 10 minutes, keep stirring in between. Add ghee and cook in microwave for another 2 minutes. Now add half of chopped almonds, cardamom powder and cook for one more minute.
Spread remaining chopped almonds in a bowl. Add the halwa in that bowl, press it nicely, and turn upside down on a serving plate.
The Halwa is ready to eat!!
THIS CAN BE PREPARED ON THE GAS STOVE ALSO.COOK IT IN A THICK BOTTOMED PAN. COOKING IT THE SAME WAY WE DID IN MICROWAVE, BUT KEEP ON STIRRING ALL THE TIME AS IT MAY GET BURNT. IT GIVES THE SAME TASTE.

Aamras!!

Hi All,
Mango Season!! Is there anyone who does not fall for mango!!! We can prepare many dishes with mango. Already many of my blogging friends have posted the recipes with mango. I am also here with Aamras or shikarni ( ಶಿಕರ್ಣಿ), which is famous in summer season. You can have it with Rice poli, Puran poli, Puri or chapati. Tastes great with anything.
This time, Mangoes are very less seen in the market. My husband got it from a village. He got the Aapus variety. Actually, Kalmi variety is used to make the Aamras, but as he did not get it, I managed to prepare it with Aapus only. We have to cut and eat Aapus variety mangoes.
He likes Puri with aamras. so, It is for him!! Puri Aamras is a great combination!!
I am giving the recipe for Aamras. 
Juicy mangoes - 3 to 4
Jaggery - 1 cup, crushed(adjust the quantity according the the sweetness of mango and jaggery)
Cardamom powder - 1/4tsp
Ripe banana - 1, sliced into small cubes
Salt - 1/2 tsp
Wash the mangoes and keep in water for some time. Remove from the water and peel the skin. Squeeze the mangoes and take a pulp in a big bowl. Keep the mangoes in another bowl. When all the mangoes are over and kept in a bowl, add little warm drinking water. Squeeze these mangoes again in a first bowl to take out all the pulp! 
Add all other ingredients and blend it with a blender only for few seconds. Keep it in the fridge, till you prepare the puris. Click here for puri recipe.

Water melon Juice(edited and reposted)

Hi All,

My way of having watermelon!!!!
scrape it inside and add little salt! have it directly. no need of glass or cup!! or straw. You will definitely enjoy the crunchy melon and juicy water.

In summer, when you come home after long sunny day, if you see a glass of red color juice topped with ice cubes!!! How will you feel???
That is the wonder of Watermelon. A crunchy and tasty fruit, you will enjoy in any season, either as a bite or a sip.
From the source, it is said that, watermelons were being cultivated in China, which is today the world's single largest watermelon producer.
Water Melon is an excellent source of vitamin C and a good source of vitamin A (here).
It is also in debate that whether watermelon is a fruit or vegetable?? For me it is both, that too after checking the recipe(Taste of NorthIndia) by Sangi of simplydelicious. Click WaterMelon Watermelon!!!!!!! for older post.


I love to have it in any form, crunchy bites removed from the fridge, a whole big glass of juice topped with ice cubes and seasoned with salt and pepper, in salad or dosa prepared with its skin. Yes!! dosas prepared using the skin of the watermelon tastes very good. Give it a try. Just add the peeled skin with soaked rice which you make for normal dosas.
Do this need any recipe???
Watermelon - 1 cup, remove the seeds
Salt to taste
Ice cubes
Blend all together to get a glass of watermelon juice.

Musk Melon, Choice is yours!!! Juice or Milk shake!

All of you might be wondering that why am I  posting the juice recipes. My interest on trying juices is increasing everyday as the Summer is in here!!! I do not like any fizzy drinks or soft drinks, ready drinks or cold drinks. I avoid giving these to my kids too. All these years, I was happy with cold water during the Summer season.


But, when I entered Madhuri's event, I went on thinking about the juices we can make easily at home! Many juices in the mind!! Let me see how much  my internet, the time, my kids will allow me to make juices and shakes before the event reaches the last date, and how much I can post the recipes. But, for sure, I will keep on trying juices from everything and make you people drink it too!!! 
Today is the Musk Melon day!
In my house, during our childhood, Musk Melon was the regular fruit. It was a must fruit on Shivrathri. Even though I know the juice will be tastier, I never tried it before.
Musk Melon is widely known as 'Cantaloupe'.  It is a summer fruit. Being rich in Vitamin C, an antioxidant, muskmelons have been believed to be good for preventing heart diseases and cancer. ... Read more here to know about more health benefits from this fruit.
There are two types of Musk Melon. One is bigger size and the other one is small. This time, I got the small ones in local market. I did not time or patience to wait for the bigger one and try the juices. So I took two small musk melons and came home.
Taking mom's version,  Instead of eating it, I tried these juices and within no time, my both daughters finished it. And they both enjoyed it having it in the same bowl made with the skin of the fruit.
That side is Musk melon milk shake, and this side is musk melon juice. The middle bowl is the seeds which you can sun dry and have it! Tastes great! 
First, giving you the recipe for MUSK MELON MILK SHAKE,
Musk Melon - 1 small,  washed, peeled and cubed
Sugar - 3 to 4 tbsp or check the sweetness of the fruit and add the sugar
Milk - 1/2 cup
Cardamom  powder - a pinch
Almond and Pista powder - 1 tbsp 
(I always keep this powder ready at home. I add it to bread jam, chapati and dosa when giving to my kids)
Salt - 1/8 tsp
Add cubed melon, sugar, milk in a juicer and turn to juice. Strain in a glass. Mix the powders and keep in the fridge for some time before you serve. 
Makes one glass only (as the melon is small).

Second, giving you the recipe for MUSK MELON JUICE,
Musk Melon - 1 small,  washed, peeled and cubed
Jaggery - 1/4 cup, (again, check the sweetness of the fruit before adding the jaggery)
Salt - 1/8 tsp
Almond and Pista powder - 1 tbsp (optional)
Mix everything in a juicer and churn it to juice. 
It is better to have it immediately. It will turn black and will not taste good, if you keep it for a longer time.



Makes one glass only (as the melon is small).
