Sweet Potato Puran Poli

Hi All,
The Shravan Month has started and the sweets are here:-), I love sweets.. 
One more delicious sweet from Gujarat. As per my knowledge, puranpoli is very common in all the parts of India. But when I was browsing for Gujarati sweets, I saw this sweet in all the sites I visited. Then I thought of making the puran poli with sweet potatoes. And they were yumm.
Here is the recipe.

Ingredients:
For Stuffing
Sweet potatoes - 3 to 4
Jaggery - as per the quantity you get from mashed potatoes
Salt a pinch
Cardamom powder - 1/4 tsp
For the cover or poli
Wheat flour - 1/2 cup
Maida or APF - 1/4 cup
Oil  - 1 tbsp
Salt - a pinch
Water to make the dough
Oil to shallow fry the poli.
Method:
Take the flours, oil and salt in a plate or a bowl. Add water to make soft dough. Keep it aside for half an hour.
Boil the sweet potatoes and allow to cool.
Grate the jaggery and keep.
Mash the boiled potatoes. Add the jaggery, salt and cardamom powder. Mix well. Divide into equal small size balls.
Take the ready dough, divide it into tiny balls.(half the size of normal small lemon)
Take dough ball and roll into a small puri.
Take the potato ball and keep in the middle. Cover it and make the stuffed ball ready.
Use oil to roll into small puran poli.
Heat tawa and roast the poli on both the sides till golden color.
Serve hot with ghee, pickle and fried dry stuffed chillies...

Kansar(Remake)

Hi All,
Being a South Indian, trying new recipes from other part of India is always a fun. But I have always seen that most of the recipes are very similar with a little alteration and a different name. 
The sweet I am posting today also comes in the same category. We South Indians( mainly North Karnataka) people make this sweet often for the puja or on new moon day. I have already posted the recipe with the name Broken wheat(or thick rava) and jaggery Halwa.
But again thought of making it the Gujarati way and post it here.
After browsing many sites, I have taken the recipe from here which is easy to make.

Microwave 2 minute wonder cake with oats and nuts

Hi All,
I am really sorry for not posting since many days. I got stuck with many things and was not in position to write for a blog.
Coming to the recipe,
This 2 minute wonder cake is a real wonder cake which is ready in exactly 2 minutes(plus 5 minutes for ingredients) and perfect for the evening snack for kids with a glass of milk. 


First time I tried this Microwave Chocolate Cake and it was just superb.
This time (promoted from Beginner to middle lever baker!!!) I thought of adding something else to this and try.
Here is the recipe

Ingredients:
APF OR MAIDA- 1 tbsp
 Wheat flour - 2 tbsp
Oats - - 1 tbsp
Sugar - 4 tbsp
Unsweetened Cocoa powder - 2 tbsp
Egg - 1
Milk - 3 tbsp
Oil - 3 tbsp 
Baking Powder - 1 pinch
Vanilla Essence - 1 tsp
Chopped nuts - 1 tbsp(I used almonds and walnuts)
Choco chips- 1 tbsp
Method:

Sieve the APF, Cocoa powder and baking powder in a plate. 
Mix egg, milk, oil, Essence and sugar in a bowl. 
Add the sieved flour and mix well till everything gets mixed and you will get one flow batter.
Add the nuts. 

It takes 2 to 3 minutes.

(Mix well with egg beater or with a fork.(don't use blender))
Grease a mug or any Microwave safe bowl and dust it with APF. Pour the batter into it.
I used the rectangle box.
Microwave on full(I have 800 power) for ONE minute.
Take it out and add the chopped chips without touching or disturbing the cake.
Microwave exactly for ONE MORE MINUTE.
Let it stand in the M/W for few minutes
your yummy, healthy cake is ready to serve.

Sukhdi(Food Remake)

Hi All,
Gujarat is famous for its clothes, diamonds and sweets. I love Gujju food. And the sweets plays major role in their food. 
Here, I have taken the recipe for Sukhdi from my closest friend Jagruti. She describes it as Sukh means Happiness. She has prepared it many times without any much preparation or planning.
When I prepared this, even I realized that its the easiest, quickest sweet to enjoy(Weight Watchers!Sorry, its not for you)
Coming to the recipe, (Click  Sinful Sukhdi (Jaggary Fudge) for original recipe)

Ingredients:
Whole wheat flour - 1 cup
Jaggery - 1/2 cup(Grated)
Ghee - 3/4 cup
Cashew nuts - few(Finely chopped)
Cardamom Powder - 1/2 tsp(Jagruti has not used)
Method :

  • In a heavy bottom pan heat ghee. 
  • Keep on low heat and add flour.  
  • Roast on a low heat till golden brown, do not allow it to burn.
  • When the mixture comes together add the grated Jaggery and Cardamom and mix very well.  
  • Take off from the heat and spread the mixture evenly in a greased tray.  Sprinkle some cashew nuts and Roll it to make even surface.
  • Cut in to a diamond shape while it's warm. 
  • Allow it to cool and serve(otherwise, you will burn your tongue :-)


My younger daughter never likes sweets, but she had half the quantity of what I made:-), even the elder one loved it very much, planning to make again, but afraid of the quantity of ghee in it :-)

Jamoon Fruit Juice -Two ways

Hi All,
Jamoon fruit brings many sweet memories in my mind.. These fruits are seasonal and we used to wait for it. During school days, we used to run to the houses where these trees were grown. House people enjoying their afternoon nap were never disturbed till one stone fell on their roof or window glass :-). And then there were few old ladies carrying these jamoon fruits in their round baskets and selling it for 10 Paises. I always love the color of these fruits.

This season, my daughter enjoyed these fruits. When I saw the event "Food palette series purple", the idea struck me to make juice with it. But I was not sure whether I will get the time to do it before July 5th. And I could do it today afternoon. But again my problem was the internet connection which was playing hide and seek with me. Luckily its working now and I hope it will be there till I finish the post and publish it  :-) (I never pray to God for anything else than this broadband service :-)), seriously, God is more kind than this service :-)))  )
Coming to the recipe,

Very easy to make and very soothing juice.
Jamoon fruit has many health benefits. Its rich in Vitamin A, Vitamin C and Iron. Its very good for the people who has diabetes. Read Here for more information.


Ingredients (for making 2 glasses)
Jamoon fruits - 20(big)
Drinking Water - 1 cup

Keep the fruits in water for some time. Clean and put it into a vessel. Add the water and allow one boil. Let it cool. Mash with the hands, remove seeds. Sieve in a serving cup. The basic juice is ready which tastes very raw and bitter. 

To make salty juice :
Add a pinch of salt, Crushed mint and white pepper powder. Mix well. Serve chilled or add few ice cubes if you want to serve immediately.

To make Sweet juice :
Add 1 to 2 tsp Sugar, half a pinch of salt. Mix well. Serve chilled.

Oats, almond and dates granola bars

Hi All,
One more recipe followed from DEEBA'S blog.
Again the same problem of not getting few ingredients here. I think there is a plus point in that also. That brings more creativity in me.
The other day Suma Rowjee posted the recipe(.Eggless Chocolate Chip Oat & Whole Wheat Snack Bar..) which she has followed it from Deeba (recipe here) and Deeba has followed it from Megan(here) and everyone with their alterations.
I thought of combining all the ideas and creating my own granola bars :-)))), and hey it was a success, I could not stop munching these lovely bars. My younger daughter was so happy to have it, and I was satisfied of giving her some thing healthy. And I never never imagined even in my dream  that I will bake some bars like these...
And the best part of these bars is its made of wheat and oats added to it are almonds and dates. What a perfect breakfast with a glass of milk to start your day. It really keeps you energetic the whole day.

Coming to my version:
Dry Ingredients:
Oats - 1 1/2 cups(I used Saffola Oats)
Whole Wheat Flour - 3/4 cup
Baking Soda - 1/2 tsp
Flaked almonds - 1/2 cup
Diced fresh dates - 1/4 cup

Wet Ingredients:
Granulated Sugar - 1/4 cup
Brown or Demerara sugar - 1/4 cup
Oil - 1/4 cup
Milk - 2 tbsp
Corn flour - 2 tbsp
Warm water - 2tbsp
Vanilla extract or essence - 1 tsp

for the coating :
Nutella spread 
and toasted flaked almonds




Method:
Pre heat the oven at 180c
Grease and line a 7x11x2 inch tin with baking parchment leaving an overhang.
Take all the dry ingredients in a bowl and whisk. Keep aside.
Mix the warm water and cornflour in a bowl and keep it aside.
In a large bowl, add milk, oil, sugar and vanilla. Beat till the sugar is dissolved (it may take 3 to 4 minutes)
Add the cornflour mix. Beat again for a minute. 
Fold in the dry ingredients and mix well. The mixture will be very thick.
Spread it in a tin and level it.  
First time I baked it at 180 c for 30 minutes.
I removed and kept it to cool, but still the bars were soft.
So I cut it into bars and again baked at 200 c for 10 more minutes. And there I got crispy granola bars.
I used Nutella spread  and some flaked almonds to top it with. (I did not had dark chocolate).


My daughters enjoyed these bars.
You can store these crispy bars in an airtight box for a week or so.

Whole wheat ,Oat & Chocolate Cookies(T&T)

Hi All,
I always love to participate in the events. If you are regular visitor to my blog, you know it. I get inspired by the themes and I give my best to cook something new according to theme.
This time when I came to know about the T&T guest hosted by Jayasri, it was already late. And when I visited the blog which Jayasri has chosen I was in a world of baking. I browsed the blog for two days and I did not get any recipe for a newbie like me. 
Deeba of  Deeba's Passionate about Baking  is very very creative and I may take years to reach her level when it comes to baking. And the photography!!! no words to explain, I mean it, she is a wonderful blogger with so much passionate about baking. I loved all the recipes, but I had many problems to follow her recipes, 
The first thing was, I am still crawling when it comes to baking, I was not sure about my success in any of the recipes.
 The second thing is ingredients, many ingredients she has used are not available at my place. Even its difficult to get cherries or strawberry also.
When I was browsing for cookies I got this one:
In this recipe also, I did not had chocolate chips and walnuts. Walnuts were out of stock in nearby shop. And I could not afford the time to visit the city to bring walnuts. I replaced it with Almonds.
And getting Chocolate chips was out of question here in my place. I need to go almost 15 Km to get it and that too not sure about the availability.
I thought of skipping the chips and following the remaining ingredients.
When I was about to start, my daughter came and asked me what I am baking, I told her about the cookies, she made a face that she does not want white cookies. She would love to have Chocolate cookies.
So there was no way for me to keep the original recipe as it is. I thought of adding Cocoa powder instead of half the qty of oats. 
Here is the recipe for the cookies with some alterations(no option for me):


Recipe in my words:
I used half the qty from original recipe(more than a dozen cookies came out with this qty)
Ingredients:
Dry Ingredients:
Whole Wheat flour - 1/4 cup + 1 tbsp
Oats - 1 cup(I used Saffola rolled oats)
Cocoa powder - 1/2 cup
(Original recipe does not have cocoa powder and she has used 1 1/2 cups of oats)
Baking Soda - 1/4 tsp
Baking powder - 1/8 tsp
half a pinch of salt
Finely chopped  almonds - 1/4 cup(original recipe had walnuts and choco chips)


Wet Ingredients:
Butter - 1/4 cup(I used fresh home made at room temperature)
Egg - 1/2
Vanilla essence - 1/2 tsp
Demerara Sugar - 3/8 cup(3 times of 1/8 cup)

Method:
  • Take all the dry ingredients in one bowl. Whisk them and keep aside.
  • In another bowl, cream the butter and sugar till fluffy.
  • Add the egg and vanilla essence. Beat for some more minutes.
  • Add the dry ingredients and mix well. 
  • My dough became dry. It was like a normal chapati dough(little softer)

  • Preheat the oven.
  • Grease the baking tray or  use the baking sheets.
  • Take a tbsp of dough and press to give round shape. You won't get nice shape, but don't worry about the shape. The taste won't differ.
  • Bake at 180C for 12 to 15 minutes. I baked it for 13 minutes.
  • Remove from the tray, remove to cooling racks.
  • Store in a airtight jar.

My both the daughters enjoyed the cookies with their favorite song and dance. Thanks to Deeba for such a lovely recipe and thanks to Jayasri for selecting this blog.

Rice and Jaggery Pancakes(akki bellada Dosa)

Hi All,
I am starting this post with my old statement : Events inspire me to try new things and sometime I try the old or traditional recipes for participating in the events.
AND I am very happy and thanks to my brother. He gifted me the camera. My new camera is SONY,DSC-W 570.(Review about the product is soon in my blog). So I can post my new recipes with new photos.

This Rice and Jaggery Pancake is not a new dish, but I never bothered to try it. When I visited many blogs, I came through this recipe. But every time, I used to read the method, loved the clicks and then forget.
and now, when there is my event going on which is guest hosted by Priya, I thought of trying this one. But I did not wanted to go through any recipes,  I wanted to rely on my memory and my version. And hey, I have good(not very good) memory. The pancakes I tried were just delicious. I checked the other blogs after I finished making, my preparation was almost the same but I had omitted few ingredients.
Coming to my version(it might be same in some other blogs too, but that is totally without my knowledge.)

Coming to the recipe,


Ingredients :
Rice(I used regular rice) - 1/2 cup
Jaggery - 1 cup or little less as per your taste
Cardamom - 1,peeled and crushed
Fresh coconut - 1/2 cup, grated or break into pieces.
Salt a pinch
Ghee to make the pancakes.(1/2 tsp for each pancake)

Method:
Soak the rice for 5 to 6 hours.
Drain and grind into coarse paste. In the last round add the grated coconut and cardamom and grind into fine paste.
Before the last round, add  the jaggery and grind one more round.
Remove and transfer the batter into a bowl.
You can start making the pan cakes immediately or even after keeping it for sometime.
Heat the dosa pan. Spread the batter into small and thick dosa.
Let it cook on low flame for half a minute. Turn it and cook on other side.
Spread 1/2 tsp of ghee on it, Remove and repeat with remaining batter.
I got 8 dosas with the qty I had taken.
Serve hot with pickle.
