Potato Fry - Chinese Style

Hi All,

One more time to say SORRY for not posting any recipe here. Its exactly one month that I posted any recipe here. I could not manage the time to be regular here.
Today I am here with potato fry in Chinese Style. My kids loved it. Its simple, yummy and perfect side dish for kids.

Ingredients :
Baby potatoes - 250gm
Onion - 1 big,  sliced
Ginger - 1tbsp, finely chopped
Garlic - 1tbsp,  finely chopped
Soy sauce - 1tsp
Vinegar - 1 tsp
Tomato ketchup - 2 tbsp( I used Maggi hot n sweet ketchup)
Chilly paste - 1/2 tsp
Crushed pepper - 1/4 tsp
Salt to taste
Olive oil - 1 tbsp(normal oil is also fine)
Sesame seeds - 1 tbsp, roasted 
Fresh coriander  and spring onion - 1tbsp each, finely chopped for garnishing(not in the photo)

Method:
Boil the potatoes.
Peel the skin and keep aside.
Heat oil in a thick kadai. When its full hot, add ginger and garlic. 
Saute it till brown.
Add onion and fry till brown.
Add the potatoes and fry for few minutes.
Now go on adding Soy sauce, Vinegar, ketchup and chilli paste.
Add Salt and pepper powder and mix well.
Fry for another minute on high flame.
Garnish with fresh coriander, spring onion and sesame seeds.
Serve hot with chapatis.

Chinese Menu in my kitchen

Hi All,
What ever happens is always for the good, the most famous lines from Geeta. And I believe in it very much.
It happens with me always. Thats the reason many times I don't get panic if something goes wrong. The same thing happened with me last week. One of my best friend came to meet me. It was first time she was coming to our Hubli house. Our friendship is almost 18 yrs old. We were meeting after 4 years. It was natural for me to get excited and was planning for some special menu. When I asked her in the phone What she wants to have, she preferred our North Karnataka food but her daughter wanted Chinese when I gave her the option. Thats why I planned for Chinese menu for my friend and her daughter. Now to plan a menu was not difficult. I thought of making Chinese fried rice, Schezwan noodles and Chilli Paneer.
Thought of bringing fresh paneer(was lazy to make paneer).
   And morning I went to the near by store (MORE) and the store was closed for stock checking :-(((
I had the ready masala packet for chilli paneer, so thought of making veg balls instead of Paneer.
This is what I served to my friend and her daughter :


So here goes the recipe For Veg Chilly:


Ingredients:
Cabbage - 1 cup, cleaned and shredded
Carrot - 1 medium, cleaned and grated
Cornflour - 3 to 4 tbsp
Red chilly powder - 1 tsp
Ginger and garlic paste - 1/2 tsp
Salt to taste
Oil - 1 tsp
Oil to fry the balls.

for Gravy
Oil - 1 tsp
Onion  - 1, sliced
Cabbage - handful, shredded
Capsicum - 1 small, sliced(optional as the Schezwan powder is very spicy)
Ginger and garlic -1 tbsp  finely cubed,
Spring onion - handful, finely chopped( I did not had)
Ching's Chilli Paneer Miracle Powder - 10 gm
Salt to taste.
Water - 2 cups
OR
JUST FOLLOW THE INSTRUCTION GIVEN ON THE PACKET.

Method:
To make Veg. Balls,
Mix all the ingredients in a bowl, except the oil to fry.
Keep oil in a frying pat on stove.
Till the oil becomes hot,
Divide the mix into equal small lime size balls.
Fry in a batch till golden brown.
Keep it aside.

For gravy:
Heat oil in a kadai. When its very hot, add ginger and garlic, saute for few seconds. 
Add onion and fry till the color is changed. Add Cabbage and capsicum. Fry for a minute more.
Add the water and bring to boil. 
Adjust the seasoning. Add the veg. balls and spring onions. 
Cook for 2 minutes,
Serve hot with Rice or Noodles.

Chinese Fried Rice(Restaurant STyle)

Hi All,
We all four in my family love Chinese food.
The Chinese food  I enjoyed the most and many times was when I was in UAE. I miss Chinese food from UAE!!
Strange right!Hey I love Arabic food too.
Coming to the recipe,
Fried rice is very common in my house, and I learnt to make exactly like restaurant after many trial and error method. Now its on weekly menu in our house. We never get tired of this rice. In UAE, I used to add the chicken to make it Chicken fried rice. But now restricted to only Veg. Fried rice. I have many benefits in this.
My younger daughter who never likes to eat vegetables, love this rice and all the vegetables goes in without any fuss. Its easy for me to make it for the lunch box. My elder daughter's friends love this rice, so I have to pack two boxes and that makes my daughter happy to share it and get compliments for her mother(thats me).

Here is the easiest recipe to enjoy the Chinese food at home. Cutting vegetables is time consuming, most of the times, I cut the vegetables at night(I do not like but, depends on the time available in the morning) and keep ready.
Ingredients:
Cooked and cold rice - 1 big bowl, loosened.
Finely cubed vegetables - 1/2 cup(Carrot and beans)
Fresh or frozen peas - 1/2 cup
Finely Shredded Cabbage - 1/2 cup
Spring onion - few lines, finely chopped OR
Normal onion - 1  small, finely sliced
Green Capsicum - 1 small, finely cubed
OR
I always use,
Green chilly - 1 big, finely cubed
(Me and my daughter are allergic to Capsicum, it gives hyper acidity)
Oil - 1 tbsp(normal or Olive)
Garlic - 4 cloves, finely chopped
Ginger - 1/4", finely chopped
Salt to taste
Cornflour - 1 tbsp
Sugar  - 1 tsp
Dry red chilly powder - 1/4 or 1/8 tsp(just to give color)
Soy Sauce - 1 tbsp
White Vinegar - 1 tbsp
Tomato Ketchup - 1 tbsp

Method:
  1. Para boil the carrot, beans and peas(if using fresh peas) and keep it aside.
  2. Keep everything ready on hand as you should be very quick to add and saute the vegetables.
  3. Heat the oil in a thick bottomed kadai.
  4. When its VERY HOT, add ginger and garlic, saute it for few seconds. 
  5. Now add the onion(if using normal one), fry for half a minute. 
  6. Add, paraboiled vegetables, green chilly(or capsicum if using), shredded cabbage. Saute for a minute.
  7. Add the spring onion at this(if using).
  8. Add the soya sauce, White vinegar and tomato ketchup. Mix well. 
  9. Add the rice, salt,red chilly powder, sugar and cornflour.
  10. Mix well, and cook for few minutes.
  11. Serve hot with Vinegar and chilly sauce.
  12. (Vinegar and Chilly sauce : Take 2 green chilly and chop it very finely. Take 1/2 cup vinegar and put it in a glass or plastic bowl. Add the chopped green chilly. Keep it for 3 to 4 hours before using. You can store it in the fridge for a week also)

I think this is the best recreation by me which tastes same like restaurant. Thats why Sending this to

Hakka Veg. Noodles with Ching's SECRET

Hi All,
I love Chinese food. And always try to make these at home. I keep trying to make Fried rice, Hakka Noodles, Hot and Sour soup and few more...
Now a days, making Hakka noodles has become regular in my house, as my kids love it. And which is better than Ching's Secret! My kids enjoy my Hakka noodles with lot of vegetables in it. And I keep most of the  products by Ching's secret. 
Thanks Ching's SECRET for making my life easy.
