Home made Ladi-paav and Buns

Hi All,
Hot cross buns, hot cross buns,
One a penny, two a penny
Hot cross buns!
I learnt this rhyme after my first daughter was born. Being a Kannada medium student, never dared to learn English till I was in fifth std. And then I had to learn to teach my daughter. I took the help of video tapes. 
Why am I sharing this with you all is, I took years to learn a rhyme on buns, and now it's 45 years to learn to bake a bun and  paav.
It's not that I never tried before, but in vain. I was failed many times, wasting all the money to buy the ingredients. But never left my hope though got disappointed every time.
Jiske paas ummeed hai, woh lakh Baar haarkar bhi nahi haaratha!
And here I am today, with no fail recipe of ladi paav. Of course, I too have followed the recipe from other blogs, But I got the perfect recipe that I am happily sharing. 

The most important ingredient which plays either the role of hero or many a times a villain is the "YEAST".  After this experiment I have come to the conclusion that "Yeast is like husband or his mood!!! if you have good yeast, then your paav or bun or bread will come out the best or else!!Same with husbands too!!

Coming to the recipe,
I browsed many blogs and websites to learn to bake these paav and ended up happily with two sites. One is HOMEMADE LADI PAV AND BUNS FROM Ruchi's Kitchen. She is an excellent blogger. Her recipes are filled with all the information and her pictorial post will help any new comer to learn cooking. And one more is from ladi paav from Tarla Dalal. What I liked about Ruchi's recipe it's more clear and her special tips will help you and boost your confidence to go ahead with the recipe. 

Ingredients : 
All purpose flour(Maida) : 3 cups
(Planning to use Wheat flour next time!)
Baking Powder 1 tsp Salt : 1 1/2 tsp 
Oil - 2 tbsp (any oil except the oil from nuts)
Little Milk and Butter  for brushing


Yeast Preparation: Luke Warm milk or water  : 2 tbsp(water should be luke warm, neither hot or cold as hot water kills the yeast)
Sugar 1 tbsp 
Active Dry Yeast :1 tbsp 
Oil 2 tbsp 

Soft Butter : 1/2 tbsp
Warm water - approximately 1 cup


To prepare yeast, follow the measurement and the method very strictly. 


Method:
1. Let's prepare the yeast mix first. Because if the yeast is not good or active and we don't get proper frothy solution, the outcome is disaster. Just throw the mix and restart the whole process.
Take all the ingredients under yeast preparation in a deep bowl. Mix well and keep it aside for 10 minutes or till you see the froth or boils. It may take another 10 more minutes.

Next steps:
2. Mix the butter and Oil in another bowl.
3. Take All Purpose flour, salt and baking powder in a big bowl. Mix well.
4. Add the yeast mix into the flour. Mix well. 
5. Knead the flour with little warm water(depends on the quality of maida. Start with half cup)
6. knead into make soft dough for 4-5 minutes. 
"KNEADING IS VERY MUCH NEEDED" 
If your finger comes out clean when you insert in the dough, then it is ready for next step.
7.Now add the butter and oil mix to the dough and start kneading for 6-8 minutes. Knead it by stretching, folding and the way you wash the cloth.
This is very important step. 
8.Cover it with a damp muslin cloth and keep it aside for 2 hours(again depending on the season, During summer it takes less time) But wait till it is doubled. Check the dough by inserting your finger. The dough should not bounce back. 
9.Take the dough and again knead it for another 5 minutes. 
Divide into 12 equal balls. 
10.If you like it in the bun shape you can just take a bigger size and give round shape and bake. Sprinkle some sesame seeds on the buns. 
place the balls in to baking pan at equal distance. 
Cover it with damp cloth again for 45 minutes.
Bake these Paav in a pre-heated over on 200 degree centigrade for 20 minutes. 
11.Remove from the oven. Allow the paav to cool. Brush the paavs with milk and butter. 
Cool completely,
Enjoy it with butter, make Bhaji Pav,  vada pav,  Dhaabeli, Missal.

EGGLESS SATHUMAAVU/HEALTH MIX VANILLA CAKE (Food Remake)

How are you?
If you observe the previous months, I have posted the recipes only for this PPCS event. (Trying to adjust the timing for everything), And today I am here with Manjula's healthy cake, and this is really healthy, We all loved the taste, the flavour, the texture and everything. I enjoyed it with my cuppa coffee. Its really yummy. Its little bit dry but you don't feel when you eat.

I used lemon juice instead of Vinegar as I was not having it. 
Shall I repeat the ingredients and the method of making it? Just copy and pasting it. (with your permission Manjula)

Ingredients
Maida - 1 cup
Sathumaavu/ Health mix - 1/2 cup(I used MANNA HEALTH MIX)
Cocoa Powder - 2 tbsp
Condensed milk - 3/4 cup, I used the Nestle brand
Baking pd - 1 tsp
Baking soda - 1/2 tsp
Lemon Juice - 1 tbsp
Milk - 1/2 cup ( extra if needed )
Vanilla  essence - 1/2 tsp
Oil - 3 tbsp


Method
  • Sieve maida, sathu maavu ,baking pd, baking soda in a bowl.
  • In another bowl add  all the wet ingredients  except lime juice and mix well.
  • Grease and flour the cake tin and preheat the oven at 350F or 180 degree C.(I used 6" pan, may be the larger one gives the best result)
  • Slowly fold the dry flour  with the wet  mix to get  a semi liquid batter.
  • Add extra milk if you feel the batter is very thick only to make it semi liquid .
  • At the last minute add the lemon juice  and mix the batter nicely.
  • Immediately transfer the prepared batter in the greased cake pan.
  • Bake this in preheated oven at 350 F for 15 - 20 min till a toothpick inserted in the cake come out clean.
  • Once the cake is done cool it in the wire rack and turn it upside down in a plate.
 May be I used the smaller tin because my cake came out but it was puffy.

EGG LESS SUPER MOIST CINNAMON AND COFFEE CAKE(Food Remake)

Are you all thinking something is wrong with me!! This is what has happened to me now a days.. Yeh BAKING ka BHOOTH  sar pe chad gaya hai, sarr pe kya pure dimaag me chaagaya hai, its controlling my mind and brain.
I had tried this cake almost a year back and those were my initial days of baking, It was not a flop but not good also. It was not baked properly. And I left the hope of baking it again. But, the other day when I was going through the recipe book, I got this one and this time I was very sure that it will come out good. Yes! and it came out like a ...??? no words.. I never thought I can bake an Egg Less cake with this much soft, moist and perfect. I am sorry, I am going on and on.....

This time, I have substituted few ingredients to suit the taste of my kids. My younger one likes chocolate in everything. So thought of adding some cocoa powder and to make it  healthier for kids, I added some nuts to it.
Coming to the recipe,
I have altered her recipe as per my taste.
Ingredients :
Dry Ingredients:
All Purpose flour - 1/2 cup
Whole wheat flour(I have used Aashirvaad brand) -  3/4 cup
Cocoa powder - 1/4 cup 
Powdered sugar - 1 cup or less
Cinnamon powder - 1 tsp
Instant coffee powder - 1/2 tsp(I have used Nescafe, Rs.2 sachet)
Baking soda - 1 tsp
Salt - 1/2 tsp
Liquid Ingredients:
Vegetable oil - 6 tbsp
Vinegar - 1 tbsp
Yogurt or curds - 1/2 cup
Strong coffee decoction - 1/2 cup
Vanilla Essence - 1 tsp
Method:

  • Preheat the oven at 180°C.
  • Spread the aluminium foil in a rectangular tin for baking the cake and keep it aside.
  • Take all the dry ingredients and sift at least 3 times in a wide vessel. This is very important step.
  • In another vessel take powdered sugar and oil and beat it till it is soft, for about 8 to 10 minutes. I used a normal egg beater. ( not electric one)
  • Add the curd, coffee decoction, vinegar and vanilla essence in the sugar and oil mixture and mix thoroughly. 
  • Slowly add the liquid mix in the dry mix and beat lightly till it blends well and get the normal cake mix. Don't over do it. 
  • Pour this ready mix into baking tin and bake it for 15 min at 180°C and 10 min at 150°C or till done. The power of your oven plays an important role here. My OTG is more powerful. I always bake at lower temperature than given in the recipe. 
  • Check with a clean knife or thin rod to check whether its baked properly.
  • Take it out from the oven and let it cool on a wire rack. Your Cinnamon and Coffee Cake is ready to serve. 
Sanchita says you can keep it for a week, but mine gets over in a day or two.

    CUSTARD POWDER COOKIES (FOOD REMAKE)

    Hi All,
    How are you? How is the weather there in your place? Here its very cold. Past 3 days its raining cats and dogs. Rainy season! enjoy the rain. I am enjoying it. Snacks are must in this rainy season to munch any time  with hot cuppa coffee or chai or milk. Some time sweet snacks, sometime savory.
    According to me,(and my kids of course) cookies are the best sweet snacks to munch any time.
    Today I am here with a different cookies. Different because its having Custard Powder in it. I have used custard powder in baking cakes and breads, but had never used it in cookies.
    This time Jagruti's event Potluck party, Cyber style! - Fun and the Challeng... chose Ramya of LemonKurry  as my partner for this month and she has prepared these lovely cookies. The recipe link is HERE .

    Hey Ramya, my kids enjoyed these. Thanks dear for sharing this recipe with all of us and bringing it to the party.


    I am here with her recipe prepared by me. There was a mistake in something 
    I think, because my cookies got skinny. I did not get the fat ones. But taste was good and all got over within half a day. My kids loved it. And I too liked the custard flavor in the mouth.
    Ingredients:
    All Purpose flour - 3/4 cup +1/8 cup or  200 gm
    Custard powder -  3/4 cup or 150 gm
    Butter - 3/4 cup or 150 gm
    Sugar - 3/4 cup or 150 gm
    Baking Sod - 1/2 tbspa
    Salt a pinch
    Vanilla essence - 3 drops
    I added
    Cocoa powder - 2 tbsp to half of the dough done
    Method :
    Take APF, salt and baking soda in a bowl. Sieve it and keep it aside.
    Pre heat oven.
    Mix the custard powder with APF mix and mix well.
    Whisk sugar and butter in a bowl till soft. Add vanilla essence and stir well.
    Add the dry flour to this mix to make soft dough. 
    Ramya says NOT TO FREEZE THE DOUGH.
    Roll the dough in to your desired thickness.  
    Cut with a cookie cutter or knife to make shapes.
    Arrange these in a baking tray and bake it for 10 minutes or less. Keep an eye to check. Mine got burnt as I kept it for long time because my first batch was very soft.
    AND 
    I DIVIDED THE DOUGH IN TWO. IN ONE I ADDED 2 TBSP OF COCOA POWDER AS MY YOUNGER ONE WON'T EAT COOKIES IF THERE IS NO CHOCOLATE IN IT.

    I got 15 big cookies.

    EGGLESS TUTTI FRUTTI SHORTBREAD(Food Remake)

    Hi All,
    Its two years now, BAKING has become a passion for me. Before,it was a nightmare for me. My kids loved cakes, pastries, brownies, cookies, all the possible baked sweets! Only and Only because of them I pushed my self to baking. If you remember, my first baking was My first bake - Chocolate Cookies which was a success then I did not turned back from baking. I faced may failures, I have thrown the whole unbaked cake into dustbin, I burnt the cookies, I forgot to add sugar while mixing... I took an oath not to bake again... But my Baking Saga continued. Now every one in my family, my friend circle their kids love my brownies, biscuits and cookies. Every one tells me that I should start a home bakery :-) Thanks every one for supporting me and encouraging me.
    There are few things which are MUST in  the kitchen. We women are attached emotionally with our utensils(some times, feel bad to throw the burnt vessel or even a broken glass) and we are more careful with many gadgets like FOOD PROCESSOR, BLENDER, MICROWAVE, MIXER, OTG.. For me I can not stay without FOOD PROCESSOR AND OTG. Those were the years where it was difficult to search for such KITCHEN APPLIANCES in the market. We did not had any option other  than getting the best available (which ever) in the local market.


    Now the time is changed. Its an ELECTRONIC ERA, This is an age of ONLINE SHOPPING.  We get many things sitting at home with just few keys pressed on the computer. I have a good experience with ONLINE SHOPPING. I enjoy it as its easy to search, compare and get it. I have ordered books from FLIPKART, I have ordered shoes from JABONG.     Isn't it a big introduction before my recipe starts? Yes, but without having OTG how can you bake the short breads I sharing with you all? So visit the site or share with others about it to buy all magical things.

    Coming to the recipe,
    Its not my own recipe, I have followed it from Priya of Enveetu Kitchen and she followed from  Sharmi's Passions, The chain continues like this if someone follows my recipe here. There is little bit change in my method, only because of my carelessness. But the result was good. 
    I got around 20 cookies
    Ingredients:
    All purpose flour - 1 cup
    Butter,unsalted - 1/3 cup, at room temperature
    Sugar - 1/2 cup 
    Milk - 2 tbsp


    The easiest baking with tastiest results.
    Method : 
    In Actual recipe, you need to cream the butter and sugar until light and fluffy. But because of my carelessness I skipped this step and directly added all the ingredients except milk. Then I realized my mistake but it was late to take the butter and sugar out from the flour. So without any option I mixed everything for more time and added the milk at the end(after 5 minutes) and turned it into soft dough. I divided the dough in to two small balls, rolled it into 1/4" thick circle. Covered it with plastic wrap(I used) or parchment paper).You can roll into log also(Priya has done this) Refrigerate it for at least 30 minutes. 

    Preheat the oven at 170C.
    Grease a Baking tray and line it with parchment or just grease the tray(I did it)
    Remove and cut into cookie shape(if you have cookie cutter) or any other shape with a sharp knife.
    If you have the dough log, slice them into thick circle.
    Transfer these in to tray.
    Bake them 10-12 minutes, depending on YOUR OTG or oven capacity. Keep an eye after 8 minutes. 
    Once the edges are brown, they are done. They will be soft when hot and turn crispy once cold. 
    Allow then to cool :-)
    Enjoy these sweet short bread with a hot cup of tea or a glassful of milk or just like that. Perfect for kid's in the evening.

    EVERYDAY CHOCOLATE BROWNIE(FOOD REMAKE)

    Hi All,
    I know, I know, its not the time to post the recipe of Cakes and brownies... Its Diwali, I should post the recipe of some sweets and savories. But just thought of sharing a recipe with Demerara sugar and then I can share other recipes.
    The brownies are very common in my house. Its almost once in 10 days , I bake the brownie. I got the recipe of Every day Chocolate Brownie from Aarthi which she had taken from one and only Nigella... I love her recipes, most of the times I have to read her recipes and be happy because I do not get many of the ingredients she has mentioned in my town :-(


    Even Aarthi has got the fantastic space and the best part is all of her recipes are step by step in pictorial way which helps any one to remember and cook easily. Thanks a lot for that dear.
    Coming to the recipe,
    Usually I follow the regular recipe but today I thought of  giving a twist to it.. only because I wanted to use Demerara sugar instead of white or normal sugar. And I added the instant Bru Coffee powder at the end.

    THE BEST SOFT AND MOIST BROWNIE I EVER MADE :-)
    Ingredients:

    All purpose flour - 2/3 cup
    Demerara Sugar - 3/4 cup(coarse powdered)
    Cocoa powder - 1/2 cup
    Eggs -2 
    Butter - 1/2 cup or little less
    Baking soda - 1/2 tsp
    Salt a pinch(skip if you are using salted butter, I always use salted Amul butter)
    Vanilla essence - 2 tsp
    any chocolate - 100 gm
    (I like to use the cooking chocolate itself )
    Instant coffee powder(Bru or Nescafe)- 1 tbsp


    Method:

    • First preheat the oven to 190 degree c
    • Line a square tin with foil and brush it with butter on it. (Using foil is really a very good idea)
    • I use Microwave for making it, you can use the normal way(as shown in Aarthi's space)
    • Take a big M/W safe bowl.
    • Add butter and the sugar.
    • Keep in M/W on HIGH for a minute.
    • Remove, mix well and add cocoa powder. Keep in the oven for 10 seconds. 
    • Remove, add in the flour, baking soda and mix well to make it soft.
    • ALLOW IT TO COOL WHICH IS REALLY VERY IMPORTANT OTHERWISE IF YOU PUT EGGS WHEN HOT,  IT WILL BE SPOILED.
    • Now add the eggs, vanilla and mix well till you get very smooth consistency.
    • Fold in the chocolate pieces and mix well.
    • Now pour this mix into the ready tin.
    • Sprinkle the instant powder evenly on the mix.
    • Bake it in the oven for 20 minutes. 
    • Allow it to cool. Cut into desired size of squares. 
    • Enjoy it cold or warm or with ice cream or hot chocolate sauce.
    Note :May be because I used the Demerara sugar, it was less sweet or may be it was because I used instant coffee powder. Whatever, the brownies were too good :-)

    JUMBO CHOCO CHIP COOKIES(food remake)

    Hi All,
    Cookies!!!  are always welcomed in my house.. any shape, any ingredient but only with one condition, the cookies should have chocolate in it. So when ever I  try new recipe for the cookie I have to replace at least 2 tbsp of flour with cocoa powder.
    It was a long time that I baked anything at home. Few days back my younger daughter told me in the morning "mamma, you have become very lazy now a days, you are not baking any cake or cookies for us" That was it,, I started to search the recipes from my other blogger friends and I landed in    's blog. And wanted to give a try to this Chocolate Chips Butter Cookies. But again came the problem of Cocoa powder., and the answer was simple, Replace little amount of flour with cocoa powder.
    When I started getting the things to bake these cookies, my daughter came into kitchen. She always love to help me in the kitchen and she is always curious about the ingredients and how to make it. When I prepared the dough, she told me to make biggggggg cookies as she wanted to have it more at a time. Then I remembered my mini flower cup cake baking moulds  which I brought from Pune. 
    Here are the jumbo cookies which got vanished within a day.
    Planning to bake some more from Jagruti's place, which are prepared with wheat flour and oats..Mixed Nuts, Oats and Whole Wheat Cookies !

    Ingredients: 
    All purpose flour(Maida) -2 cup
    Cocoa powder - 1/4 cup
    Butter - 1/2 cup(room temp)
    Sugar - 3/4 cup
    Egg - 1 
    Baking powder -1/4 tsp
    Baking soda - 1/2 tsp

                                        

    Method:
    Preheat the oven at 180degree c.
    Take all the dry things in a bowl and mix well.
    Beat the butter and sugar till light and fluffy.
    Beat in  the egg, mix well.
    Then goes the dry flour mix.
    Add the choco chips
    Mix well to make a soft dough. 
    Take small ball from a dough, press slowly it from in your palm. Repeat with the remaining dough. hey, wait, I pressed the dough in to the mould I had.
    Arrange these in a baking tray with a little space in between(if using baking tray)and keep in the oven., I kept the mini moulds directly in the oven.
    Bake these for 10-12 minutes.
    Remove and allow it to cool. They will be crispy after sometime.
    Enjoy these with hot cup of coffee, tea or a glass of milk.

    Nankhatai with Choco Chips(Food Remake)

    Hi All,
    My one more try in Baking :-))))
    Its just yummy, vanishes as it goes into your mouth.. you crave for some more and you have rights too. The best part is its very easy to make:-)
    I am talking about these Nankhatai which I adopted from Simple Indian Food and she took it from  Raaga of The Singing Chef.

    I have altered the recipe!!
    I added 2 tsp of milk as my dough was very dry and crumbled
    AND
    I added 1/4 cup of Choco chips as my kids love it..
    The result was fantastic.. 
    I am going to make these again..

    ABSOLUTELY NO KNEAD BASIC WHITE BREAD(FOOD REMAKE)

    Hi All,
    HOW ARE YOU? I KNOW I AM NOT ABLE TO POST HERE REGULARLY. HOPEFULLY I WILL BE BACK TO MY REGULAR BLOGGING SOON. 
    THERE ARE SOME TIMES WHERE YOU DON'T GET THE THINGS YOU WANT. AND ITS VERY COMMON WITH ME.. LIVING IN A SMALL CITY, I ALWAYS FACE THIS PROBLEM OF NOT GETTING FEW COMMON INGREDIENTS ALSO.
    I WAS SEARCHING FOR INSTANT DRY YEAST FROM PAST 15 DAYS. I WAS NOT GETTING TIME TO GO TO THE CITY TO SEARCH FOR IT. AS THE LAST DATE OF EVENT IS COMING NEAR, I HAD TO RUSH TO THE MARKET(15 KM AWAY) TO GET THE DRY YEAST.
    AND I WAS NOT AT ALL SURE ABOUT BAKING THE BREAD. I ALWAYS THOUGHT ITS ONLY THE  BAKER'S JOB.
    SO WITH LOT OF HESITATION, I STARTED THE PROCESS. THINKING THAT THE END PRODUCT WILL BE NOT COME OUT GOOD, I DID NOT BOTHER TO TAKE THE PHOTOS...
    BUTTTTTTTT.........
    MY FIRST EVER BAKED WHITE BREAD WAS JUST PERFECT, EXACTLY OR MORE TASTIER THAN THE BAKERY PRODUCT(VERY PROUD TO SAY). IT WAS SOFT, SPONGY, WITH PERFECT TASTE OF LITTLE SWEET BREAD........ YUMMMMM. I COULD NOT STOP SEEING AT IT BEFORE I CLICKED THE PHOTOS. AND I COULD NOT WAIT TO HAVE A BITE WITH BUTTER ON IT AT NIGHT 10 o'CLOCK.
    I CAN'T STOP WRITING ABOUT IT... 

    COMING TO THE RECIPE,
    MY HUNT STARTED ON THE RECIPES IN BLOGGING WORLD. I ENDED UP WITH 3 RECIPES AND I CHOSE ONE FROM THEM,  Its from Vaishali's Zestyflavors.

    I have followed the exact procedure only skipping the use of electric mixer. 
    Absolutely, I did not knead it....
    AND TO BAKE I FOLLOWED THE METHOD FROM Suma Rowjee's  Batter White Bread - One Easy Loaf!

    Once the dough doubles, gently deflate and transfer it to the greased loaf pan. You can oil your hands to pat the dough into shape. Cover with a greased aluminum foil and let rise again till double in volume. Its important to grease the foil or it will stick to the top of the risen dough. When you feel away the foil...aaagh!!! some part of the dough will come along with it. It happened to me..the torn loaf broke my heart :-) so I am telling you to learn from my mistake...
    Ingredients:

    All purpose flour - 3cups(sieved and measured, this is from Suma's recipe)
    Warm Water - 1 Cup 
    Sugar - 1/3 Cup 
    Active Dry Yeast - 2.5 Tsp 
    Salt - 1/4 Tsp 
    Oil - 2 Tbsp 
    Warm Milk - 2 Tbsp 


    Method: 1. In a bowl, mix yeast and sugar in 1 Cup of Warm Water. Allow it to proof atleast 10 minutes. It will become frothy.2. Now add Oil, Warm Milk and Salt. Mix well. Keep it for few minutes.3. Take the flour in a big wide vessel. Add the yeast mix and start kneading it. Knead till you get soft dough.4. Place dough in a well oiled bowl. Cover with a damp cloth. Allow to rise until it is doubled, about 1 hour. I kept it for one hour.5. Take the dough and Punch it down. Knead for a few minutes and shape into loaf and place into well oiled 9x5 inch loaf pan. 6.Allow to rise for 45 more minutes, or until dough has risen 1 inch above.7.Bake at 175degree C for 35 minutes. 8. Once the bread is done, take it out from the pan. Brush some butter on the top (It gives a nice glaze) and let it cool on wire rack completely.
