ABSOLUTELY NO KNEAD BASIC WHITE BREAD(FOOD REMAKE)

Tried and tasted by Nivedita
Hi All,
HOW ARE YOU? I KNOW I AM NOT ABLE TO POST HERE REGULARLY. HOPEFULLY I WILL BE BACK TO MY REGULAR BLOGGING SOON.
THERE ARE SOME TIMES WHERE YOU DON'T GET THE THINGS YOU WANT. AND ITS VERY COMMON WITH ME.. LIVING IN A SMALL CITY, I ALWAYS FACE THIS PROBLEM OF NOT GETTING FEW COMMON INGREDIENTS ALSO.
I WAS SEARCHING FOR INSTANT DRY YEAST FROM PAST 15 DAYS. I WAS NOT GETTING TIME TO GO TO THE CITY TO SEARCH FOR IT. AS THE LAST DATE OF EVENT IS COMING NEAR, I HAD TO RUSH TO THE MARKET(15 KM AWAY) TO GET THE DRY YEAST.
AND I WAS NOT AT ALL SURE ABOUT BAKING THE BREAD. I ALWAYS THOUGHT ITS ONLY THE  BAKER'S JOB.
SO WITH LOT OF HESITATION, I STARTED THE PROCESS. THINKING THAT THE END PRODUCT WILL BE NOT COME OUT GOOD, I DID NOT BOTHER TO TAKE THE PHOTOS...
BUTTTTTTTT.........
MY FIRST EVER BAKED WHITE BREAD WAS JUST PERFECT, EXACTLY OR MORE TASTIER THAN THE BAKERY PRODUCT(VERY PROUD TO SAY). IT WAS SOFT, SPONGY, WITH PERFECT TASTE OF LITTLE SWEET BREAD........ YUMMMMM. I COULD NOT STOP SEEING AT IT BEFORE I CLICKED THE PHOTOS. AND I COULD NOT WAIT TO HAVE A BITE WITH BUTTER ON IT AT NIGHT 10 o'CLOCK.
I CAN'T STOP WRITING ABOUT IT...

COMING TO THE RECIPE,
MY HUNT STARTED ON THE RECIPES IN BLOGGING WORLD. I ENDED UP WITH 3 RECIPES AND I CHOSE ONE FROM THEM,  Its from Vaishali's Zestyflavors.
CLICK Gorgeous White Bread! for the original recipe.
I have followed the exact procedure only skipping the use of electric mixer.
Absolutely, I did not knead it....
AND TO BAKE I FOLLOWED THE METHOD FROM Suma Rowjee's  Batter White Bread - One Easy Loaf!
READ IT IN HER OWN WORDS:
Once the dough doubles, gently deflate and transfer it to the greased loaf pan. You can oil your hands to pat the dough into shape. Cover with a greased aluminum foil and let rise again till double in volume. Its important to grease the foil or it will stick to the top of the risen dough. When you feel away the foil...aaagh!!! some part of the dough will come along with it. It happened to me..the torn loaf broke my heart :-) so I am telling you to learn from my mistake...
Ingredients:

All purpose flour - 3cups(sieved and measured, this is from Suma's recipe)
Warm Water - 1 Cup
Sugar - 1/3 Cup
Active Dry Yeast - 2.5 Tsp
Salt - 1/4 Tsp
Oil - 2 Tbsp
Warm Milk - 2 Tbsp

Method: 1. In a bowl, mix yeast and sugar in 1 Cup of Warm Water. Allow it to proof atleast 10 minutes. It will become frothy.2. Now add Oil, Warm Milk and Salt. Mix well. Keep it for few minutes.3. Take the flour in a big wide vessel. Add the yeast mix and start kneading it. Knead till you get soft dough.4. Place dough in a well oiled bowl. Cover with a damp cloth. Allow to rise until it is doubled, about 1 hour. I kept it for one hour.5. Take the dough and Punch it down. Knead for a few minutes and shape into loaf and place into well oiled 9x5 inch loaf pan. 6.Allow to rise for 45 more minutes, or until dough has risen 1 inch above.7.Bake at 175degree C for 35 minutes. 8. Once the bread is done, take it out from the pan. Brush some butter on the top (It gives a nice glaze) and let it cool on wire rack completely.
I have copied the exact recipe from Vaishali.

I can't wait for my kids to get up in the morning and have this bread for the breakfast :-)))))

Chocolate Chip Chocolate Bread(Food Remake)

Tried and tasted by Nivedita
Hi All,
My first ever baked bread. Yuppieeeee, I loved baking this. I never thought I can bake the bread.
This month all my dreams are coming true. I learnt to drive the car :-))))))) It was my daughter's dream and my mothers's wish that I should learn to drive the car. Now I am waiting to get the permanent licence to take my kids for a long drive :-))

I have followed the recipe from Champa's blog. She is my first teacher when it comes to baking. Her blog is like one baking class where you feel that she is standing in front of you and teaching you.
Click here for the original recipe. Only change in my recipe is I have used half the quantity from the original recipe.

Vegetable Sandwich

Tried and tasted by Nivedita
Hi All,
Sandwich!! Who does not like sandwiches?? One can be more creative while making these sandwiches. You can make it healthier by adding healthy ingredients and you can make it junk food by adding some fried food, cheese or butter!!
But I love this combination. Its evergreen and most common sandwich which is prepared all over India. Its more healthier if you use brown bread.
It is easy to make because all the vegetables are easily available at home and not all the vegetables are compulsory.
The vegetables you can see it the photo are what I love to have it in my sandwich. Cabbage leaves is optional.
Coming to the recipe:
Ingredients:
Fresh bread - 4(to make two sandwich)
Potato - 1 big, boiled and cut into thick slices
Tomato - 1 big or 2 small, washed, and cut in to round slices.
Cucumber - 1 big,  washed, peeled and cut into thick and round slices
Carrot - 1 big, washed, peeled and cut into thick and round slices.
Cabbage leaves - 1 for each, torn into pieces
Butter - 1 tsp for each sandwich
Green chutney(Pudina or mint leaves chutney): I always keep it in the
fridge :-)

Fresh coriander - 1 bunch, washed, cleaned and chopped
Mint leaves or Pudina - 1/2 bunch, washed, cleaned and chopped
Green chilly - 1 long
Jeera - 1 tsp
Transfer the above ingredients in a grinder and grind into a fine paste.
Remove it to a bowl.

  • Arrange all the ingredients in a plate so that it is easy to send these into sandwich.

  • Take 2 slices of bread on a plate.
  • Apply butter,
  • Spread the green chutney,
  • Spread potato slices,
  • Keep all the vegetables one on another to make thick layers.
  • Cover it with another slice.
  • Keep in the toaster or Sandwich maker and cook it till it turns slightly brown.
  • You do not have toaster or sandwich maker? No problem, you can make these on hot tawa or pan also. Don't want to toast?? Have it just like that.
  • Have it hot with some more green chutney or ketch up or sauce.

I want to dedicate this sandwich to Keri of  SANDWICH 365. I know I am late for doing this. I love her blog and this is just a small thank you to her.

Bread and Fruit bars(M/W grilled)

Tried and tasted by Nivedita
Hi All,
I wanted to try something with bread and fruit in combination for my event. I never tried this combo. Two days back when I brought bread for breakfast, I kept on thinking what to make! Then this came in my mind. I do not know its common or something new, my kids loved it. I too enjoyed it!
Its a great filler in the evenings for kids and healthy too. If you get brown bread then its real healthy food for everyone.
You can take any fruits of your choice. I chose only apple and banana. The reason is these are the common fruits easily available and I do not get variety of fruits here.
Ingredients :
White bread or Brown bread slice : 4
Apple - 1
Banana - 1
Honey - 1 tsp
Cinnamon powder - 1/2 tsp
Mixed fruit jam or any jam - 1 tbsp for each bread
(I used ready jam and home made apple jam)
Fruit jam to decorate
Butter to spread on the bread

Wash and grate the apple.
Peel and mash or grate the banana.
Mix  well the grated apple, banana, honey, fruit jam and cinnamon powder.
Microwave on HIGH for 2 minutes. Mix well and keep it ready.
Take little butter and spread on the breads. Microwave HIGH for 1 minute.
Take out and evenly spread the fruit mix on the bread slices.
Cut the slices into four bars.
Grill in MICROWAVE for 3 to 4 minutes. (check the power of your M/W)
Decorate these bars with extra jam.

Serve it as an evening snack with glass of hot milk.
Sending it to three events:

Loving heart to win you all!(Sandwich)

Tried and tasted by Nivedita
Hi All,
Do not get confused with the title of the post! I am sometimes crazy! I did not wanted to give a normal name to this one!

Is there anything easiest and tasty, healthy(if you use brown bread) and quick food to have when you are really very hungry and can not wait to stand and cook!!
It is bachelor's first love!! And kids adore this! I just love it!!! Am I too dramatic???
Do I need to give the recipe for this???
I hope no!!!

The ingredients I used here is
Bread - 4 to make 2 sandwiches
(Brown bread is best, but I do not get in my place(I love the brown bread), so I used the white bread)
Butter - any brand of your choice
Cabbage leaves - 2 (one for each)
You can use lettuce also(again, same problem, I do not get in my place, I need to goto city to get them!!!)
Tomato - 1 cut into round slices
Ohh! I forgot to give the green chutney recipe,
Its simple!
Seasoning ingredients:
Salt to taste
Lime juice - 1 tbsp
Mix these both to a ready paste, and the green chutney is ready to go into the sandwich.

I am sending this loving heart to two lovely ladies. Let's see whose heart it will win???

Cook like a bong page also.

Only one thing you have add here is boiled potato to make it little healthy, it is not in the photo.

And then again it is going to
(without the boiled potato of course!)

It is perfect for no cook event. Don't you think so?
Enjoy it any time!

Keep Smiling,
