Microwave 2 minute wonder cake with oats and nuts

Hi All,
I am really sorry for not posting since many days. I got stuck with many things and was not in position to write for a blog.
Coming to the recipe,
This 2 minute wonder cake is a real wonder cake which is ready in exactly 2 minutes(plus 5 minutes for ingredients) and perfect for the evening snack for kids with a glass of milk. 


First time I tried this Microwave Chocolate Cake and it was just superb.
This time (promoted from Beginner to middle lever baker!!!) I thought of adding something else to this and try.
Here is the recipe

Ingredients:
APF OR MAIDA- 1 tbsp
 Wheat flour - 2 tbsp
Oats - - 1 tbsp
Sugar - 4 tbsp
Unsweetened Cocoa powder - 2 tbsp
Egg - 1
Milk - 3 tbsp
Oil - 3 tbsp 
Baking Powder - 1 pinch
Vanilla Essence - 1 tsp
Chopped nuts - 1 tbsp(I used almonds and walnuts)
Choco chips- 1 tbsp
Method:

Sieve the APF, Cocoa powder and baking powder in a plate. 
Mix egg, milk, oil, Essence and sugar in a bowl. 
Add the sieved flour and mix well till everything gets mixed and you will get one flow batter.
Add the nuts. 

It takes 2 to 3 minutes.

(Mix well with egg beater or with a fork.(don't use blender))
Grease a mug or any Microwave safe bowl and dust it with APF. Pour the batter into it.
I used the rectangle box.
Microwave on full(I have 800 power) for ONE minute.
Take it out and add the chopped chips without touching or disturbing the cake.
Microwave exactly for ONE MORE MINUTE.
Let it stand in the M/W for few minutes
your yummy, healthy cake is ready to serve.

Event Round Up : MEC - FRUITS

Hi All,
Yes, one more event round up! I am getting expert in handling Events. Am I?!!
I do enjoy hosting the events and now I am used for expecting more entries for my events and every day getting up to check my mails for the entries!! And I have become strong person also to face the situation where I do not get any entry or a single entry. But thats fair here. Many times I too do not get the time to participate in many events(I try hard to send at least one entry for most of the events) I feel I get encouraged to try new food if I take participation in any event.
Sorry guys! I am going on..... with my dry philosophy.
I am very happy with this event! The way it went, the way I took time to try something new with fruits.
Fruits, usually is consumed directly or in the form of juice. I was very happy to try some new dishes with fruits and that too in MICROWAVE!! It was a great fun.
I want to thank Srivalli for giving me this chance to host her event MEC-series.
Now, coming to the entries, I am really happy to know that my blogger friends
are so much creative and dare to  try new things.

Microwave Easy Cooking - FRUITS, Event Announcement

Hi All,

When Valli mailed me to check whether I can host her MEC event for this month, I was happy. Few months back , she had given me the chance to host it. But I was not so much confident to handle any event. Now I am!(Am I? you all should tell me!) 
Thank you Srivalli for giving me a chance to host this event. 
I had few options in my mind for the theme. Finally, I chose FRUITS.
I love the color, the texture, shape and everything about  the fruits. Not to forget at all about the nutrition and the energy!(I am eating Banana while writing this).Nature is so kind for gifting fruits to us.


Are you ready to try new dishes with fruits cooked in Microwave?

As this event is in blog world since 2 years, all our old friends know the rules. But here are the rules again for newbies and for me!
  1. Cook any Vegetarian/ Non vegetarian food with FRUIT as a main ingredient  in the MICROWAVE  and post it in this month in your blog.
  2. Please note that the cooking process has to be done fully in the MICROWAVE. You can use blenders / food processors but NO use of other measures  to cook.
  3. Make a link back to this announcement and Srivalli MEC announcement page
  4. Use of  logo is mandatory, as it is easier to spread about the event.
  5. Multiple entries are allowed.

M/W Paneer Matar in Coconut milk (No Onion, No Garlic)

Hi All,
Paneer is my all time favorite and I keep trying different recipes with it.
This one is in microwave and I thought of not using Onion and Garlic and give it a try. I was not sure about the taste. But it came out really tasty.

Recipe :
Paneer - 200 gm (I took ready Paneer from the stores), cut in to desired shape, I like the long strips
Shelled peas - 50 gm (you can use frozen also)
Tomato - 1 big, grated to get the juice or puree
Ginger - 1/2", cleaned and crushed
Oil - 1 tsp
Bay leaf - 1
Cardamom - 1
Clove - 1
Cinnamon - 1 small piece
Salt to taste
Red chilly powder - 1 tsp
Fresh cream - 1 tbsp

Coconut powder - 2 tbsp
Water - 1/2 cup
Mix the coconut powder in water to get thick milk. Adjust according to the liquid. If it becomes thick add some more water and if its watery add some more powder.

  • Heat oil in M/W Safe bowl on HIGH for 1 minute
  • Add the whole garam masala and again heat HIGH for 30 seconds
  • Now add crushed ginger and again heat on HIGH for 30 seconds
  • Add tomato puree, mix well and cook on HIGH for 2 minutes. Stirring in between after 1 minute.
  • Add Salt, red chilly powder and peas.
  • Cook on HIGH for a minute.
  • Add coconut milk, Paneer and little water.
  • Mix well and COOK on HIGH for  3 to 5 minutes stirring in between. Please check the timing as each M/W has different settings. Mine is 800 as HIGH.
  • Add Fresh cream, mix well.
  • Allow to stand for few minutes.

Paneer Matar is ready to serve.

Black forest cake in Microwave and an award

Hi All,
I had kept some other recipe to post. But, when today I tried this cake and clicked the photos, I could not wait posting it. Its like a magic. As all of you know, my daughter loves that chocolate cake in the mug. Past 3 days she was behind me to make it but I was avoiding it. I wanted to try some new cake but was hesitating as most of the times my baking is worst and I get disappointed with the out come.
But today I gathered my disappointment and told it to be little positive! And I am here with my black forest cake in microwave. 
This recipe is given by the lady who taught to bake the cake. Its actually heaven when you bake it in an oven. I don't know why am I delaying buying an oven! I really have to feel confident that I can bake anything in that oven. Then only I am going to buy it!
My daughter wanted small round pieces so that she can take it to school tomorrow. And I did not have proper dish to bake it big size. So I tried it in a mug and then in small bowls. When I saw this tiny round cake, I called my princesses  to come with their Barbie dolls. And we three had a birth day party for the Barbie dolls. My kids were jumping with joy.
I have put the Chocolate syrup on the cake to decorate and that was enough for my little one as she does not like the cake.
Coming to the recipe,
PLEASE FOLLOW THE INSTRUCTIONS AND THE QUANTITY.
Ingredients :
All Purpose Flour or Maida -1/4 cup or 40gm
Cocoa Powder - 1/8 cup or 10gm
Sugar - 1/4 cup or 50gm
Eggs - 2
Baking powder - 1/2 tsp
Soda - a pinch
Hot water - 1 tbsp (Add if required, if the batter is thick)
Vanilla essence - 1 tsp


Method :
Whisk egg, sugar and vanilla essence over hot water till custard consistency. (double boiler) This is must to get spongy cake.
Add sieved maida, cocoa powder, baking powder and pinch of soda into it.
Mix cut. Add little hot water if you feel its thick. (I did not put) Mix cut
Put in a greased 6" Microwave safe dish. 
Keep on HIGH  for 2 minutes or less. According to your M/W power. My M/W has 800 power as HIGH.
I baked it for 2 minutes and gave one minute standing time. 
Release sides and allow it to cool. 
Cake is done. Its very spongy, and very light. But tastes little dry as it is baked in M/W.
There is solution for that also.
Make a sugar syrup by adding 1 tbsp sugar in 1/2 cup of water. Cut the cake into 2 equal halves with a thread or knife. 
Soak the cake with the syrup by spreading it carefully with small spoon. Refrigerate for an hour or so.
If you are lucky enough to get whip cream, spread the cream after you put the sugar syrup.
The lovely black forest cake is ready to eat.
DO NOT WAIT AFTER YOU MIX EVERYTHING. 
DO NOT WHISK FOR LONGER TIME
You can bake it in a preheated oven at 180 deg C for 30 minutes.

Aloo Matar Sabji (Peas & Potato masala) - Microwave method

Hi All,
Most of the times, my use of microwave is restricted to warm the food. But now a days I am trying to make new recipes in it, as it is like an extra hand for me. Morning is very busy time, cooking all the things at a time, Make coffee, boil the milk and drinking water, make breakfast, prepare the food for kid's lunch box. My two burner stove is not enough for me. Thats why, when ever I am short of time with many things to cook in short time, I take the help of microwave. There are only few dishes I always love to repeat it. One is Microwave Chocolate Cake (learnt it 2 months back, and its my daughter's favorite) which I repeat once a week. 
The second one is this, Aloo matar sabji which goes very well with Puri and hot chapatis.
Here is the way to make it 100 % in microwave
Ingredients :
Potato - 4 to 6 medium
Onion - 1 big, finely chopped
Fresh or frozen peas - 1/2 cup
Tomato - 1 big, grated
Curry leaves - few
Coconut milk - 1/4 cup(I used ready coconut powder and added it in warm water)
Oil - 1 tsp or you can skip it.
Salt to taste
Red chilly powder - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp (I use MTR product which is mild but gives good aroma)
Fresh coriander to garnish
Wash the potatoes. Prick all over. 
Keep in the microwave on HIGH for 5 minutes or if your M/W has the option to boil the potatoes(I have) cook it with the option on for 5 minutes. Allow it to cool. Peel the skin and cut into cubes.
Cook the peas also in M/W on HIGH for 3 minutes. Keep aside
Take oil in M/W safe bowl  (if using). Keep on HIGH  for a minute. Remove and add onions. Or if not using oil, add the onions directly.
Keep on HIGH for 3 minutes and let the onions fry and change the color. I forgot to take the snap of that.
Next add the tomato and mix it. Cook on HIGH for 3 minute, stir in between. 
Remove it. Add all the dry powders. Cook for half a minute. Now other remaining ingredients except the coriander. Cook on HIGH for 4 to 5 minutes.
Keep it in the M/W for few minutes. 
Open and transfer it into the serving bowl. Garnish with fresh coriander.
Aloo matar sabji is ready to serve.
This makes for 4 to 6 persons.
