EGGLESS TUTTI FRUTTI SHORTBREAD(Food Remake)

Hi All,
Its two years now, BAKING has become a passion for me. Before,it was a nightmare for me. My kids loved cakes, pastries, brownies, cookies, all the possible baked sweets! Only and Only because of them I pushed my self to baking. If you remember, my first baking was My first bake - Chocolate Cookies which was a success then I did not turned back from baking. I faced may failures, I have thrown the whole unbaked cake into dustbin, I burnt the cookies, I forgot to add sugar while mixing... I took an oath not to bake again... But my Baking Saga continued. Now every one in my family, my friend circle their kids love my brownies, biscuits and cookies. Every one tells me that I should start a home bakery :-) Thanks every one for supporting me and encouraging me.
There are few things which are MUST in  the kitchen. We women are attached emotionally with our utensils(some times, feel bad to throw the burnt vessel or even a broken glass) and we are more careful with many gadgets like FOOD PROCESSOR, BLENDER, MICROWAVE, MIXER, OTG.. For me I can not stay without FOOD PROCESSOR AND OTG. Those were the years where it was difficult to search for such KITCHEN APPLIANCES in the market. We did not had any option other  than getting the best available (which ever) in the local market.


Now the time is changed. Its an ELECTRONIC ERA, This is an age of ONLINE SHOPPING.  We get many things sitting at home with just few keys pressed on the computer. Isn't it a big introduction before my recipe starts? Yes, but without having OTG how can you bake the short breads I sharing with you all? So visit the site or share with others about it to buy all magical things.

Coming to the recipe,
Its not my own recipe, I have followed it from Priya of Enveetu Kitchen and she followed from  Sharmi's Passions, The chain continues like this if someone follows my recipe here. There is little bit change in my method, only because of my carelessness. But the result was good. 
I got around 20 cookies
Ingredients:
All purpose flour - 1 cup
Butter,unsalted - 1/3 cup, at room temperature
Sugar - 1/2 cup 
Milk - 2 tbsp


The easiest baking with tastiest results.
Method : 
In Actual recipe, you need to cream the butter and sugar until light and fluffy. But because of my carelessness I skipped this step and directly added all the ingredients except milk. Then I realized my mistake but it was late to take the butter and sugar out from the flour. So without any option I mixed everything for more time and added the milk at the end(after 5 minutes) and turned it into soft dough. I divided the dough in to two small balls, rolled it into 1/4" thick circle. Covered it with plastic wrap(I used) or parchment paper).You can roll into log also(Priya has done this) Refrigerate it for at least 30 minutes. 

Preheat the oven at 170C.
Grease a Baking tray and line it with parchment or just grease the tray(I did it)
Remove and cut into cookie shape(if you have cookie cutter) or any other shape with a sharp knife.
If you have the dough log, slice them into thick circle.
Transfer these in to tray.
Bake them 10-12 minutes, depending on YOUR OTG or oven capacity. Keep an eye after 8 minutes. 
Once the edges are brown, they are done. They will be soft when hot and turn crispy once cold. 
Allow then to cool :-)
Enjoy these sweet short bread with a hot cup of tea or a glassful of milk or just like that. Perfect for kid's in the evening.

Ghee(Clarified Butter)

Hi All,
Can I write here I love Ghee!!! I love it, I can drink it. It is a basic ingredient in Indian food. It gives royal touch to the food. It is a main thing in auspicious functions.
The ghee is prepared by butter. The butter is prepared by cream. The cream is by milk, the milk is by cow.....
Hehe, this is what I teach my kids. I always use it in their food, with chapati or rice or bread. A tbsp ghee everyday keeps you healthy. 
I always like to have home made ghee as its aroma makes me hungry! And it tastes really good. I missed making home made ghee when I was in UAE. Now again I started making it at home.
Most of the blogs too have a recipe to make this ghee. Here is my share,
To get the cream, the milk should be very thick. 
The milk should be boiled on very low flame to get thick layer of cream. Cool the milk and then remove the cream. 
Collect it in a steel or glass jar or box with lid. Boil the milk two or three times in a day to get more cream.
Always store this cream in the refrigerator as we need to keep it for a week.
After second day, add 1 tsp of curds or yogurt. Mix properly. Keep on storing the cream for a week. Mix the cream every alternative day.
After one week or when the jar is full,
Transfer it into a deep, round with narrow mouth. Add 1/2 cup of sour curds. Mix well. Keep it outside for 12 to 15 hours.
Its always better to make the butter early in the morning. 
Before, I always had wooden churner to make the butter. But now a days I use hand mixer. Its easy and quick way to get the butter. Stop in between while churning or using hand mixer. Other wise, the heat produced will melt the butter which is forming. After 5 minutes, you will see the cream turning into small balls. Keep on mixing in between to join those small balls into big one. Take little butter in between in your fingers and rub it. If you feel its soft and smooth, then the butter is done. Or continue churning for some more time.
Keep it in the fridge for 15 minutes. 
Remove it out. Gather the butter in to a ball shape. 
Put it in good water. Wash it twice to remove the sour taste.
Transfer into a thick bottomed steel vessel.

Keep on medium flame till it melts fully. Then on low fame till it stops bubbling and giving out a nice aroma.You will see the burnt cream(which failed to turn into butter). 
Remove from the heat. 

Keep it covered for few minutes. 
Sieve it into a glass jar after when it is warm. Do not make it cold or else you can not sieve the ghee.
The ghee is ready. You can store it for 15 days if kept outside. And for a month(If it remains) if stored in Refrigerator.

Loving heart to win you all!(Sandwich)

Hi All,
Do not get confused with the title of the post! I am sometimes crazy! I did not wanted to give a normal name to this one!

Is there anything easiest and tasty, healthy(if you use brown bread) and quick food to have when you are really very hungry and can not wait to stand and cook!!
It is bachelor's first love!! And kids adore this! I just love it!!! Am I too dramatic??? 
Do I need to give the recipe for this???
I hope no!!!


The ingredients I used here is
Bread - 4 to make 2 sandwiches
(Brown bread is best, but I do not get in my place(I love the brown bread), so I used the white bread)
Butter - any brand of your choice
Cabbage leaves - 2 (one for each)
You can use lettuce also(again, same problem, I do not get in my place, I need to goto city to get them!!!)
Tomato - 1 cut into round slices
Ohh! I forgot to give the green chutney recipe,
Its simple!
Fresh coriander - 1 bunch, washed,cleaned and chopped
Mint leaves or Pudina - 1/2 bunch, washed, cleaned and chopped
Green chilly - 1 long
Jeera - 1 tsp
Transfer the above ingredients in a grinder and grind into a fine paste.
Remove it to a bowl. 
Seasoning ingredients:
Salt to taste
Lime juice - 1 tbsp
Mix these both to a ready paste, and the green chutney is ready to go into the sandwich.

Only one thing you have add here is boiled potato to make it little healthy, it is not in the photo. 

And then again it is going to
(without the boiled potato of course!)

It is perfect for no cook event. Don't you think so?
