EGGLESS SATHUMAAVU/HEALTH MIX VANILLA CAKE (Food Remake)

Tried and tasted by Nivedita
 Hi All,
How are you?
If you observe the previous months, I have posted the recipes only for this PPCS event. (Trying to adjust the timing for everything), And today I am here with Manjula's healthy cake, and this is really healthy, We all loved the taste, the flavour, the texture and everything. I enjoyed it with my cuppa coffee. Its really yummy. Its little bit dry but you don't feel when you eat.
Here is the link for original recipe.

http://desifiesta.blogspot.in/2013/10/eggless-sathumavu-health-mix-vanilla.html
I used lemon juice instead of Vinegar as I was not having it.
Shall I repeat the ingredients and the method of making it? Just copy and pasting it. (with your permission Manjula)

Ingredients
Maida - 1 cup
Sathumaavu/ Health mix - 1/2 cup(I used MANNA HEALTH MIX)
Cocoa Powder - 2 tbsp
Condensed milk - 3/4 cup, I used the Nestle brand
Baking pd - 1 tsp
Baking soda - 1/2 tsp
Lemon Juice - 1 tbsp
Milk - 1/2 cup ( extra if needed )
Vanilla  essence - 1/2 tsp
Oil - 3 tbsp

Method
  • Sieve maida, sathu maavu ,baking pd, baking soda in a bowl.
  • In another bowl add  all the wet ingredients  except lime juice and mix well.
  • Grease and flour the cake tin and preheat the oven at 350F or 180 degree C.(I used 6" pan, may be the larger one gives the best result)
  • Slowly fold the dry flour  with the wet  mix to get  a semi liquid batter.
  • Add extra milk if you feel the batter is very thick only to make it semi liquid .
  • At the last minute add the lemon juice  and mix the batter nicely.
  • Immediately transfer the prepared batter in the greased cake pan.
  • Bake this in preheated oven at 350 F for 15 - 20 min till a toothpick inserted in the cake come out clean.
  • Once the cake is done cool it in the wire rack and turn it upside down in a plate.
May be I used the smaller tin because my cake came out but it was puffy.

EGG LESS SUPER MOIST CINNAMON AND COFFEE CAKE(Food Remake)

Tried and tasted by Nivedita
Hi All,
bAKE, bAKE, bAKE AND bAKE....
BAKE THE CAKE,
CAKE BAKE
Are you all thinking something is wrong with me!! This is what has happened to me now a days.. Yeh BAKING ka BHOOTH  sar pe chad gaya hai, sarr pe kya pure dimaag me chaagaya hai, its controlling my mind and brain.
I had tried this cake almost a year back and those were my initial days of baking, It was not a flop but not good also. It was not baked properly. And I left the hope of baking it again. But, the other day when I was going through the recipe book, I got this one and this time I was very sure that it will come out good. Yes! and it came out like a ...??? no words.. I never thought I can bake an Egg Less cake with this much soft, moist and perfect. I am sorry, I am going on and on.....

Coming to the recipe,
I adapted this from Sanchita of http://litebite.in/
Check out her space.. if you are a baking bhooth and eating bhooth She got N numbers of baking recipes. Here is the link for today's recipe Cinnamon Tea Cake
This time, I have substituted few ingredients to suit the taste of my kids. My younger one likes chocolate in everything. So thought of adding some cocoa powder and to make it  healthier for kids, I added some nuts to it.
Coming to the recipe,
I have altered her recipe as per my taste.
Ingredients :
Dry Ingredients:
All Purpose flour - 1/2 cup
Whole wheat flour(I have used Aashirvaad brand) -  3/4 cup
Cocoa powder - 1/4 cup
Powdered sugar - 1 cup or less
Cinnamon powder - 1 tsp
Instant coffee powder - 1/2 tsp(I have used Nescafe, Rs.2 sachet)
Baking soda - 1 tsp
Salt - 1/2 tsp
Liquid Ingredients:
Vegetable oil - 6 tbsp
Vinegar - 1 tbsp
Yogurt or curds - 1/2 cup
Strong coffee decoction - 1/2 cup
Vanilla Essence - 1 tsp
Method:

  • Preheat the oven at 180°C.
  • Spread the aluminium foil in a rectangular tin for baking the cake and keep it aside.
  • Take all the dry ingredients and sift at least 3 times in a wide vessel. This is very important step.
  • In another vessel take powdered sugar and oil and beat it till it is soft, for about 8 to 10 minutes. I used a normal egg beater. ( not electric one)
  • Add the curd, coffee decoction, vinegar and vanilla essence in the sugar and oil mixture and mix thoroughly.
  • Slowly add the liquid mix in the dry mix and beat lightly till it blends well and get the normal cake mix. Don't over do it.
  • Pour this ready mix into baking tin and bake it for 15 min at 180°C and 10 min at 150°C or till done. The power of your oven plays an important role here. My OTG is more powerful. I always bake at lower temperature than given in the recipe.
  • Check with a clean knife or thin rod to check whether its baked properly.
  • Take it out from the oven and let it cool on a wire rack. Your Cinnamon and Coffee Cake is ready to serve.
Sanchita says you can keep it for a week, but mine gets over in a day or two.

Banana & Carrot Eggless Cake in Cooker (Food Remake)

    Tried and tasted by Nivedita
    Hi All,
My last entry to the event.. When I did not had oven, I always wondered how to bake a cake.. I knew my mom used to bake the cake in the cooker before she got her oven. But many people told not to bake in the cooker as we use sand in it and it spoils the cooker. I was scared and was not ready to loose a cooker :-))))
Then I got the recipe to bake a cake in a cooker(after I got my two ovens in the kitchen, life is like that always, Bhagwan deta hai toh chappar phadke deta hai :-))))))
Here sanjeeta kk  has used the water and separator as the base and aluminium to cover the cake, She has mentioned it as bread, but personally when I tasted, it was soft and spongy like cake. So I thought of labeling it as Cake. I hope she won't mind.
The carrot and banana combination is a hit here.
click Banana & Carrot Eggless Bread    for detailed recipe. I am not giving the whole recipe here as Its a last minute entry to the event and I can not trust my internet connection.

    Black Forest Cake

    Tried and tasted by Nivedita
    Hi All,
This week, My blog is celebrating the CAKE WEEK. The reason is again the event. As I got stuck in the house work, I could not post regularly and my cake photos left behind. Now is the time for me to post all the cakes.
Today is the day for Black forest cake, which is my favorite... everyone's favorite in my house. And who does not like this one?
And when it comes to baking, I am a very good copycat.. I always follow the recipe from other blogs. But this time it was the recipe which I learnt in my baking class. I have collected many more versions of Black forest cake recipes, which I am going to try soon. The reason is I got the Whipped cream powder which was not available all these days. Its a wonder powder. Just add some chilled water and whip it with the blender. Wooo... you have a yummy whipped cream...
I am not sure about the reason why my cake was hard, may be it was more baking powder or old baking powder, I felt its not that soft.. may be will try soon again to find out the mistake.

The recipe is here: (I have edited it according to my taste)
    Ingredients:
    Cocoa powder - 1/8 cup
    APF - 1/4 cup
    Eggs -2
    Sugar(Granule) - 1/4 cup
    Baking powder - 1/2 tsp
    Baking Soda -  a pinch
    Hot water 1 tbsp(If required)
    Vanilla essence - 1 tsp
Sugar syrup - 1/8 cup to soak the cake(mix equal qty of water and sugar and mix well)
    Whipped cream - 1 cup
Cherries-  1/2 cup, one boil, remove seeds. Chop few cherries to spread and keep few cherries full to decorate.

    Method :

    • Whisk egg, sugar and vanilla essence over hot water till custard consistency.
    • Add Sieved APF, cocoa powder, baking powder and a baking soda.
    • Mix it. Add little water. Mix and cut.
    • Put in a greased and dusted 6inch tin and bake in a preheated over at 180 degree for 30 minutes. RElease sides. Remove and cool.
    • Cut in to 2 equal halves with a thread and soak with sugar syrup.
    • If you have a ready whipped cream thats fantastic., or if you have whipped cream powder prepare the cream by adding water and keep it ready in the refrigerator for half an hour.
    • Now
    • take the first half of the cake.  Apply the cream, Spread chopped cherries.
    • Keep the second half of the cake on it. Soak with sugar syrup. Apply the cream again.
    • Decorate with the cherries and grated chocolate(I did not had chocolate :-(  )
    • Keep in the fridge for sometime before you serve.

    Vegan Mango Cake(Food Remake)

    Tried and tasted by Nivedita
    Hi All,
    Two years back....
I was scared of baking. The word itself made me sweat.. I never thought that I will start baking one day.
But there is always first step and we learn to walk only when we start that first step and keep on falling down and getting up again. Each fall is a lesson for us to keep the next step carefully. This is what happened with me here.
There are many times that I have wasted the whole cake, I have felt bad for the money I spent for the ingredients and taken oath that I will never bake the cake :-),. But every oath ended within 7 days. Again I had tried and again another failure...
But, now, may be I will not be a great baker or can get a job in baker's cake.. but definitely I can bake a cake which my kids love to have. I can bake a cake for my kid's small parties..
Here is my Nth number of cake... This also was a failure because I used Rice flour instead of APF..
When  I am talking about the cakes and bakes,, I would love to thank many bloggers here, who are my inspiration to keep my baking fire on in my mind..
(It definitely doesn't mean that  other bloggers are not my inspiration, but when it comes to baking, I just love to dig into these blogs and every time I have got perfect recipes. It is me who is not good at baking.) How can I forget the tips by Aparna S Mallya on how to preheat the oven before we start baking and few more. Thanks dear.

I don't know when will I reach their level!!!!!...
Thanks all for the great help.. You all are my teachers.
    Coming to today's cake,
I have followed the recipe from Champa. :-), I think I mailed her several times with many dumb questions, before I baked this cake, and even after I baked these. But each time, she replied me promptly and with proper solution. Thanks dear.
You know that first time it was a disaster as I used rice flour.. But again I tried baking it and it came out very nice.. I enjoyed each bite..
This was the disaster cake which I prepared using rice :-))))

    Eggless Chocolate Cake (Food Remake)

    Tried and tasted by Nivedita
    Hi All,
I pinched myself for many times!! Is it a dream or real!Is it me who did this!
Wait, Wait! I am not writing any suspense story.
I baked an egg less cake and it came out real! It was spongy, it was moist, it was sweet, it was just perfect except the top crust. That was my mistake as I baked it on High temperature than mentioned.

After I brought OTG, I am not getting full time to concentrate on baking. But today I made it a point to bake a cake. But I am restricted to use Egg because of Shravana Month. So my hunting started to browse for egg less cake. As usual I landed into Sailu's world. You search anything related to food. There are few blogs where you will be directed and Sailu's  Sailu’s Kitchen is among one of those.
Ohh, she got many egg less baking recipes with her. As all of you know about my daughter's love for chocolate, I chose THIS one.
And I followed her recipe 99%, my 1% mistake was I baked it on 180degree C whereas she had mentioned to bake it on 150 degree C.
So the top crust was cracked.
And best thing what I did was, I took little batter and put it in cup cake mold to bake. Check the click to see my wonderful baby cakes!!

My camera has some ego problem it seems! It never gives me proper flash or light when I need it. Its become difficult for me to take good photos. I don't want to buy new one now. I have to carry on with my this old friend only. I could not take nice photos of my big cake. (Please do not compare my click with her's when you visit her blog!)

I cut the top crust and took the photo. The taste was tooooo good and I never thought I can bake a cake like this.
Thanks Sailu for such a wonderful and easy recipe. I have also given the recipe with little extra tips.

    Coming to the recipe:
    Butter - 1/2 cup(at room temperature)
    or
    Vegetable oil - 1/2 cup

Brown sugar - 2 tbsp(if you do not have, use normal sugar and let me know, I think it should not make much difference)
    Water - 2/3 cup
    Sweetened Condensed milk - 1 tin(400gm), I used Nestle
    Maida or APF - 1 3/4 cup
    Cocoa Powder - 1/4 cup
Baking Soda - 3/4 tsp(Use new one, the cake will not come out good if Baking soda and powder are old)
    Baking Powder - 1 3/4 tsp
    Salt - 1/4 tsp
    Vanilla Essence - 2 tsp
    1. Grease and dust an 8" baking pan of desired shape
    2. Preheat over to 150degree C.
    3. Sieve APF, baking powder, Baking soda, cocoa powder and salt at least 3 times and keep aside.(It helps the flour to get mixed properly and get aerated.
    4. Mix the sugar, butter, condensed milk and water with blender or beater.
    5. Add the Vanilla essence and flour slowly in batches to this to get the batter of ribbon consistency.
    6. Bake in preheated over for 40-45 minutes of till you get clean toothpick out of the cake when you insert it.
    7. PLEASE FOLLOW THE RECIPE TO GET GOOD RESULT.
    8. DO NOT OVER BEAT THE BATTER.
    9. DO NOT KEEP THE BATTER OUTSIDE FOR LONG TIME ONCE IT IS READY.IT SHOULD GO DIRECTLY INTO THE PAN AND THEN INTO THE OVEN.
Wonderful cake is ready to serve. If you are lucky to get the ingredients to decorate the cake you can do it. I do not get whipped cream here, and I still have to learn to make it at home. Till then enjoy my cake without makeup!
    Sending this to,
